Breakfast of Champions: The Omega-3 Gluten-Free Muffin
It is a true luxury to be able to lounge around in the morning without places to go and people to see. Afforded the luxury of time, you can prepare a splendid assortment of eggs, meats, vegetables, fruits and nuts worthy of our caveman ancestors. After all, they didn’t have to go to work by 8am, so why should we?
Alas, this argument never works with any of my employers, so I’m forced to forgo the leisurely breakfast in favor of something quicker. Judging by the line outside the McDonald’s drive-through every morning I’m not the only one. But eating healthy doesn’t have to take a long time (no longer than the wait at the drive-through), nor does it have to cost any more than the Egg McMuffin everyone is waiting for. In fact, my favorite breakfast is not only fast and inexpensive, but absolutely delicious.
The Omega-3 Madness Muffin is one of life’s finer pleasures, and can be yours in just a few short minutes on a busy morning. It offers you a whopping 4.8 grams of inflammation-fighting omega-3s, plus about 10 grams of fiber if you add a little cocoa or berries to the mix. Try it and see if eating healthy doesn’t get any quicker or tastier than this.
Omega-3 Gluten-Free Muffin
- 3 tbsp. ground flaxseed
- 1 tsp. olive oil
- 1 omega-3 egg, lightly beaten
- 1 small ripe banana, mashed
- ½ tsp. vanilla extract
- Cocoa powder, fresh berries, nuts or other additions as desired
Combine ingredients and spoon into mug. Add chopped fruit, cinnamon, cocoa or any flavorings you like. Microwave on high 2 minutes or longer depending on mug and microwave. Flip upside down to dislodge muffin. When it’s ready it will be firm in the middle and have the consistency of thick oatmeal.
